Garden Fresh Bruschetta

Fresh tomatoes, creamy mozzarella, and earthy basil top a crisp, toasted baguette.

1 loaf sliced baguette

2 cups diced tomatoes (Sungold tomatoes are our favorite)

1-2 leaves chopped, fresh basil (tip: cut with scissors)

2 tbsp olive oil

salt and pepper to taste

1 cup chopped fresh mozzarella cheese

1 In a bowl, toss together the tomatoes, basil, olive oil, salt, and pepper.

2 Toast slices of bread or baguette of your choice.

3 Last, add the mozzarella to the tomato mixture and spoon the combination over the bread slices. Enjoy!

Note: Fresh grown tomatoes are the BEST in this recipes. If you've never grown tomatoes before, they're an easy plant and they produce tomatoes for weeks and weeks. Our favorite variety is called a Sungold Cherry, which is small and sweet and bright orange. The kids eat them right off the vine all summer.

Basil is a common and simple herb to grow at home and would be great to use in this recipe or it can of course be purchased fresh from most grocery stores.
