Spiced Zucchini Bread

This long-time family favorite is boosted with fresh spices and can be easily made gluten-free.

3 eggs

1 cup vegetable oil

2 cups sugar (I use closer to 1 cup)

1 tsp vanilla

3 cups flour

1 tsp salt

1 tsp baking soda

¼ tsp baking powder

2 tsp cinnamon

1 tsp ground nutmeg

1 tsp ground ginger

2 cups shredded zucchini

1 Beat eggs until light and foamy. Add oil, sugar, vanilla, and zucchini. Mix lightly but well. Add sifted dry ingredients and mix.

2 Pour batter into 2 greased bread pans (or 4 small loaf pans). Bake at 350 degrees for 55-60 minutes or until toothpick comes out clean (small pans require less cooking time). Cool for 10 minutes and then turn out to cool completely.
